Copper is an amazing place to stop while you're in Bozeman. It's located on Main Street and right away you get kind of speakeasy vibes as you descend into the dining area down a set of stairs. The lighting isn't overly bright and the dark walls and rustic wood tables add a nice cozy ambiance.

The menu isn't large, only one page, which is great as it allows you to make a quick determination of what you want, which, let's be honest here, if you came to Montana and aren't vegan or vegetarian, you probably want to have some steak. And Copper does not disappoint! They have a great selection of steaks. I had a salad with hanger steak, which was absolutely delicious. The portion sizes and prices are also very reasonable, with entrees available at a midrange price point if you aren't up for their steak special set at Market Price.

But where Copper REALLY shines is their drinks, as it is a whiskey bar first and foremost. They have whiskey flights available and a wonderful selection of high-end whiskeys, scotches and bourbons. I had a bourbon based drink called the Coalminers Daughter, and it was excellent and very refreshing. And they have an awesome dessert cocktail called the Nightcap which is great on it's own and just heavenly alongside their desserts, particularly the skillet cookie, which I think I devoured in record time.

Aside from the food and ambiance, the waitstaff is just incredible. We were seated instantly once we got down the stairs even though they were quite busy, and our waiter was knowledgeable of the menu and very amiable and attentive without being over solicitous, as our water was always filled when we asked, but we never had a question posed to us while chewing a bite of food.

Basically, Copper is the place to visit while in Bozeman. It has a great atmosphere, great food, great drinks and great staff. It offers an upscale dining experience in a unpretentious package that anyone can enjoy, whether you're dressed for camping or if you're dressed up for a night on the town. Your best bet is only going here for drinks, even then the markup is ridiculous for anything and everything. For an example a single Suntory Toki Japanese whiskey is $12, this whiskey is not hard to find in America anymore, a retail bottle is $30-$40. Their food prices are even worse for the quality, everything is so laden with grease it made me sick. They seem to not drain anything that’s touched a fryer as the cheese curds and fries were practically dripping grease. Continuing with the trend of overpriced menu items, the brisket sandwich had the taste and texture of cheap meat, almost like a chuck roast and was almost flavorless and served on a bun that was nearly as greasy as the fries. Our main server was fine, there were several additional servers who brought food and drinks to the table for the appetizers, entrees and throughout the meal and they misplaced almost everything, took quite a while to get the check. Atmosphere was fine, it used to feel more like a speakeasy, now it’s just a reflection of what Bozeman is, a shiny veneer with no substance to justify being overpriced. I used to recommend Copper years ago but can no longer recommend it to anyone unless they want to waste money and risk food poisoning. They can’t even post a current menu online or renew their website, and it might be on purpose so people don’t see the inflated prices. 🌟🌟🌟🌟🌟 Copper in Bozeman is an absolute gem! From start to finish, our dining experience was exceptional. The atmosphere is dark and friendly yet sophisticated, perfect for a fun evening out.

First off, the cast iron cornbread appetizer was a revelation. Warm, moist, and bursting with flavor, it set the tone for a fantastic meal. The hint of sweetness paired beautifully with the savory dishes to come.

For the main course, we tried both the bison ragu and the shrimp couscous. The bison ragu was rich and hearty, with tender meat that melted in your mouth. The flavors were balanced and complemented by the perfectly cooked pasta. The shrimp couscous was a delightful surprise with its fresh seafood and fragrant couscous, creating a dish that was both light and satisfying.

Service was great throughout the night. Our server was knowledgeable about the menu and offered great recommendations (even on hikes we should check out nearby). The pacing of the meal was just right, allowing us to savor each course without feeling rushed.

We went at 5:30pm with no reservations, so we were not able to get a table. There was bar space available at that time but it filled up quickly after 6pm. Plan ahead and make reservations. Food was amazing. We got the Summer Blackened Shrimp and the Filet. One of the best meals we had on our trip. Highly recommend!
